Hackney Pantry banana bread - vegan

This banana bread comes out time and time again at our events as our clients just love it. Super moist and sticky it packs in plenty of fibre and is a real crowd pleaser especially as it is vegan. Oh and its insanely easy for you to make at home - yay!

Whip up a batch at the weekend, eat any time of the day but particularly for an indulgent breakfast topped with greek yoghurt and fruit compote, and if there is any left over by Monday you will be the office favourite if you take it into work πŸ˜‰.

Banana Bread - vegan

Makes 2 loaves

Ingredients

Wet:

7 medium bananas mashed

10 psyllium husk capsules or 2 tbsp

2/3 cup almond milk

2/3 cup veg oil

4 tsp vanilla paste

2 tbsp maple syrup (or honey if you are not vegan)

Dry:

1 cup oats

1/2 cup light brown sugar

2 tsp baking soda

1 tsp baking powder

1 tsp salt

3 cups spelt flour

Method

Pre-heat the oven to 175C (fan). Prepare two 1.5lb loaf tins with baking paper or liners and spray with olive/vegetable oil.

Mash the bananas really well until you have a puree. Add all the wet ingredients to a bowl with the bananas and mix well.

Measure out the dry ingredients and mix together well. Add the dry ingredients to the wet and stir well until just combined. 

Scoop the mixture into the two loaf tins, even out the top and finish with sliced banana or walnuts, or just leave plain. Bake for 35-40 minutes or until a skewer comes out clean. Remove from the tins and leave to cool on a cooling rack. ENJOY!
