Coconut Choc Chip Cookies


These taste absolutely delicious straight out of the oven - the coconut flour adds a natural earthy balance to the chocolate which is divine. They don't keep so well so if you don't scoff the whole lot in one go heat the remaining cookies up for a few minutes in the oven before you tuck in. If you don't have coconut flour you can substitute almond flour instead.

Coconut Choc Chip Cookies


  • 1/2 cup coconut flour
  • 1/3 cup muscavado brown sugar
  • 1/4 tsp salt
  • 1/4 tsp baking soda
  • 3 eggs
  • 1/3 coconut oil melted and cooled
  • Half a bar of good quality dark chocolate chopped


Preheat the oven to 175C. Mix all the ingredients together. Use an ice cream scoop to blob onto a lined greased baking sheet. Bake for 18 minutes. ENJOY!
