Cacao porridge, raspberries, banana and cardamon spiced granola

We made this Cacao porridge for our Acton Pantry pop up and it went down a storm, that time we took it the extra mile and served it with caramelised bananas along with a spoonful of tahini, the raspberries and the granola. It's the perfect way to spice up your normal weekday porridge and make it into something more decadent and even more delicious. 

For our at home version we used frozen raspberries and the granola again, added some cacao nibs and kept it simple with just sliced banana this time. Tahini, peanut butter, stewed apple, toasted seeds, spiced pears, pecans, walnuts, blueberries, almost anything sweet you might have in your fridge or pantry, all would be good, mix it up and find your favourite.

Cacao Porridge

Serves 2 

Ingredients

  • 1 cup porridge oats
  • 1 cup almond milk (or other nut milk) plus 1 cup of water
  • Pinch of salt
  • 1 tbsp cacao powder
  • Honey or your sweetener of choice

Method

Mix the oats with almond milk, water and salt, bring to a simmer and cook, stirring occasionally for about 5 minutes until cooked through. Off the heat add the cacao powder along with honey to taste.

Add toppings of your choice - we had some of this cardamon spiced granola in the pantry so added that, along with some cacao nibs, fresh banana and some frozen raspberries (the raspberries are particularly delicious with the chocolate and frozen is perfect in winter when they aren't in season). Top to your heart's content and ENJOY! xx
